Scotch Collops with Suet Dumplings

Ingredients:

a gopin o' best steak
guid amount o' butter
flure
sahlt and pepper

Dumplings:

muckle o' ris yersel' flure
twa nievefs o' shredded suet
nick o' sahlt
parsley

Method:

Skin the steak, take oot any gristle, an mash it
Melt the creesh intae a proota pan and add the mince, mix weel tae dissolve lumps.  Let it simmer. 
Dredge floor o'er the mixture, then add enough boiling water or stock tae keep moist.
Season with sahlt and pepper, cover and cook for aboot 1/2 an hour
A cupple o' minutes before serving add suet dumplings

Dumplings:

Mix intae a firm dough wae water, and roll intae small balls
Drap intae the het mince and lee fer a ween o' minutes til cooked
